Touchscreen working great for weeks and now buggy and erratic.

WinCE has pretty good screen response. It should also wipe out everything that might be lingering when flashing between Android ROMs. That could be why you are still seeing issues when you reverted back.Flash to WinCE to flush Android files and then flash a version of Android that wasn't unstable.
