My favorite Android 3 Honeycomb rom is Flashback 8.0 Alpha, and can be foun in the Flashback Honeycomb Alpha 8.0 thread. it is a great Rom, but does have flash issues (but there are work arounds), but I have not been able to get netflix to work on it, and the camera does not work. It is also on the 1.2 branch, so you would want to load after updating to the stock 4349 ROM.
Note, the 4349 rom was pulled from Viewsonic's website, but can still be downloaded from the GTab recovery Firmware thread downloaded here.

Also streams very well I watched an entire Soccer game on espn 3 yesterday without a problem

Kernel : Clemsyn 1.5boot1.2Gingerupdated.zip
CPU : @1.5ghz
Launcher : ADWLauncher EX using iphoneish UI
OC : CPU_Master_for_Root_Users_v1.9.1
Voltage : pimpmycpu-3.0
Able to run 1080p and 780p test video and they are smooth.
1080p : big_buck_bunny_1080p_surround.avi
720p : Medusa.mp4
Everything works, camera, Bluetooth, video. I don't use any of my tab
as game machine so I cannot say all the game works.
I will recommend VEGAn-TAB ROM and also Brilliant Corners as a daily runner. BTW ran both ROM using Clemsyn's kernel with no issue.

I installed the Market and changed some scripts. ext keyboard and mouse work, blutooth works, evernote works, skype works on mine, fring does work, netflix works. Map has no animation though but I could live with it. all live wallpaper has no issues regarding launcher pro. PVZ, I am not sure. that app is not available in Canada. I think, the most complete market is in Vegan. I retained the old UI because I believe look awesome.
