You do this by

1) power off tab
2) power on tab
3) immediately hold the two side buttons and the big bottom button

This will bring you to the 'recovery menu'.

Thanks to Keijames' indications and Kostyamat's (as they were in english and not russian), here they are more detailled for noobs and/or anxious people, i'm part of .. :

==GOOD NEWS==

• Screen goes really off
  
• SetCPU detects 3 frequencies: 800/400/160
  
• External bluetooth is working (Keijames)
  
• More 3D games should be accessible (see here)

==WARNINGS & BAD NEWS==

• Datas won't be restored and you'll have a device from scratch
  
• Google apps don't work for me (gmail can't connect, providers for calendar and contacts aren't presents,...)
  
• You should consider it more as a preview for testing purpose than a fully working version (that's why the backup is really important)
  
• Those steps described how i did to update, do not intend to apply to every case so you can't blame me if something goes wrong...

==PREREQUISITES== for the 4GB rom version:

• Apad with 2 screws, 1 speaker and Android 2.2 (no screws and 2 speakers: works too except G-sensor, see here)
  
• Plugged to the charger, (optionnal: freshly started and no datas connections to avoid potential interferences)
  
• Rooted (with z4root)
  
• Dev tools (was installed on my rom) for terminal emulator or a terminal app
  
• A =>4GB free space (a 4GB fully formated should be good, if not a bigger one is needed) sdcard inserted and mounted (check simply if you can see it's content in Astro or ES File Explorer) or best 8GB to avoid swapping backup and 2.3's rom with a computer

==FILES (4GB version)==
Here is the .img rom (dated from the 12 May 2011) from Hiapad.com (4GB version) splitted in 3 .rars:
Part 1 (1GB)
Part 2 (1GB)
Part 3 (547MB)

You have to click on "Télécharger ce fichier" (for non french speaking peoples.. )

md5 checksum : dff251b45fed3a3bad5f9fc78f8fad01
(of my recomposed .img file i flashed)

Then let's roll:
0 - If you have a sd with 8GB of free space: copy the 2.3 img on your SD, previously renamed in "update.img" easier to type.
1 - Launch "Dev Tools" and open "Terminal emulator"
2 - You'll have the command line tool (aka Terminal) with this prompted:

$

3 - Type:

$su

4 - SuperUser app should popup and ask if you want to grant DevTools or Terminal Emulator the superuser right, obviously you answer "yes"
5 - Now prompt should like

meaning you're logged as root user, this means you can do everything so from here be very very cautious and check everything you type

==BACKUP==
6 - Backuping your current rom (2.2 or any other like xaumod's), type exactly:

dd of=/extsd/backup.img if=/dev/block/mmcblk0 bs=1048576

<!>Depending of which rom you're on you may have to type "/sdcard/" instead of "/extsd/" to reach external SD..
nb: you can save to any other name: backup2.2.img in any directory you've previously created on the sd (not sur it creates it on fly), don't ask me what means what's after..

7 - Hit enter or go (depends of your keyboard), the cursor simply goes to the next line and nothing is displayed
8 - Wait....(smokers, you can go have one it's about ~10 to ~30 mins, depends on your SD card)...wait....
9 - When finished, it displays something, can't remember exactly.."Done in 600 seconds" and number of bytes written...
10 - You can directly check the size by typing:

cd extsd
ls -l

it'll list the content of the sdcard with sizes of files or easier with Astro or ES File Explorer or later on your computer.
11 - If you have a 8GB SD with 2.3's rom on it and your backup is the right size, skip to 14
12 - Unmount your external sd, plug it in your computer, move your backup on your hard drive and copy the rom on the SD

13 - If needed re-do steps 1, 2, 3 and 5 (4 if you only allow superuser's rights once) what counts is to have this prompt:

14 - Type exactly

dd if=/extsd/update.img of=/dev/block/mmcblk0 bs=1048576

did the steps according to roo...everything went peachy...works awesome except google stuff but its cool....and not only that but it also fixed my video card issue...now does opengl 2.0 es stuff....thinking my original image was fubared...so if anyone has a backup of their 2.2 image of a 2 screw 1 speaker unit they wouldnt mind sharing i would appreciate it

happy those steps worked for someone else...what do you mean about the video card..?
i have a backup (with datas) of the rom dated from january 2011 (see my signature), how could i tell if i had the same issues..? All i can tell is that i couldn't sync events and contacts with it (other gapps were fine)

Frankly, i don't know, so i'll advise you not to try and search around here and androidtablets.net, but i think i've read somewhere it wasn't working.

I've installed it on 2 speakers - no screws and it works well except for g-sensor, it must be patched.. for now I use use vtl launcher fixed in landscape.

Okey it's cool to know that it worked on a two speaker model, but after reading other comments that Google apps don't work, i think i'll wait for a new firmaware or let's hope for a new modded one like the xaumod.

And for ppl who has tested this, any imporvements in 3D games? faster? smoother? idk...

More bug report :

YouTube - able to start and has index lists and search work, but when I click to play video, it seems not able to playing.

Remark, I install Adobe flash 10.3, web browse flash working fine, but web page YouTube still not play video.

NO recovery or not working.

I have the same on YouTube, haven't tried flash, didn't search the apk yet.
Not tried recovery, maybe buttons' combination is different..

rolled back to 2.2 and found i would rather have an incomplete 2.3 as to use that....screen shake was less and the opengl 2.0 usage is worth the missing google and youtube stuff

Same here, i prefer a device that really goes on standby and can throttle than a complete laggy rom..what are games you tested that works better..?
in addition, i asked chip3c about a new 2.3 update with google apps working:

like i said anything 2d ran fine with 2.2 but couldn't run anything with 3d graphics (i.e. angry birds/fruit ninja/zenonia ran fine but nothing from gameloft worked). on 2.3 i could now run highborn and electopia benchmark (neither ran on 2.2) and once i added chainfire 3d + plugins (another app that didnt work in 2.2) i can now run full 3d games like dungeon hunter + eternal legacy...just gotta change the loaded plugin to play the specific game....but they work. i really think this could be a decent tablet if you have the right software installed
